Vegan Quiche Recipe for Brunch

How many times have you gone to a barbecue, bar mitzvah, or birthday party, and either had to eat before, or starve and run home to eat later? Or how many of you have ever had a "wish burger" (bun with just the toppings), or lived off of a dry veggie tray and salad (because of course they only have ranch)? I don't blame the hosts for not accommodating myself and my family, after all, they had to plan an entire party, they can't just plan around one single guest. There are some situations that this is going to always happen, but in many instances it can be easily avoided with one simple question! Any time I am invited to go over anywhere, the first thing I ask is:
"Can I bring anything?"
I do this not only to be a polite guest, but to also open up an opportunity to bring something to the party! Asking this question opens up the door to discuss your dietary restrictions on your side of the court, not being drilled on the spot. A lot of times after having this discussion the host will be nice enough to think through an option or a really quick fix they could do to their current plan to accommodate you! They could keep a pasta sauce on the side for you if they were planning a meat sauce, add a quick box of veggie burgers to the grill if they were doing burgers, or make sure they had some bagels and a fruit platter at the brunch they were having. Other times they are appreciative for the offer and are more than happy that you offered to bring something over (and probably took some weight off their shoulders because they really had no idea what you could eat!). This is a GREAT opportunity! Not only can you use it as an opportunity to show off your cool cooking skills, but its a great education and outreach tool for veganism - showing people the variety of food that we can eat and how delicious it is! Be sure to make enough for the whole group to try and not just for yourself! Everyone will want to try it out!
